My husband and I recently went on a fabulous vacation to Vancouver and stayed in a luxurious hotel that just happened to have the number one rated restaurant in the whole city! Incredible, right?
Breakfast each morning was an experience for the senses: the aromas were intoxicating, the variety of choices was visual overload, the displays were gorgeous, and the flavors … well, the flavors were mouthwatering, delectable, luscious … you get it … simply wonderful!

And here’s the version I tried at home. Mine isn’t as pretty but tasted pretty close to the original!
Homemade Granola
½ cup of light oil - I used a combination of vegetable and olive oils
½ cup of honey
1 teaspoon cinnamon
½ teaspoon of salt
3 cups of raw oats - I used Quaker Old Fashioned Oats
2 cups of chopped nuts - you can use whatever nut you prefer. I used walnuts because my husband has been to Costco again and I have an abundance of walnuts.
1 cup of dried fruit (optional)
Preheat the oven to 300 degrees. Line a baking sheet with parchment paper.
Mix the oil(s), honey, cinnamon, and salt together in a large bowl. Whisk to combine.
Add the oats and the nuts and mix well to coat.
Spread the mixture in the parchment-lined baking sheet, pressing down with a spatula.
Bake about 20-30 minutes. It is done when it is golden brown.
Remove from the oven. Mix in the dried fruit (if using), pressing the granola back down to cool.
Allow to cool completely. Once cool, break the granola apart and store in an airtight container.
Making the parfait is simple: pour about 1 cup of granola in a bowl, top with yogurt, add berries and enjoy!
