White Bean Chicken Chili

This is a super easy and delicious crockpot meal that you can put together before work and come home to a satisfying, hearty, and healthy dinner!



White Bean Chicken Chili

  • 5 cups of great northern beans that have been soaked overnight

  • 5 cups of chicken stock

  • ½ stick of butter

  • 1 tablespoon of chopped garlic

  • 1 small onion, diced

  • 1 small can of green chilis, use more if you like things spicy

  • 2 boneless, skinless chicken breasts, or chicken thighs

  • 1 tablespoon of cumin

  • 1 tablespoon of dried oregano

  • ½ bunch of fresh chopped cilantro, use more if you like more


  1. Put everything in the crockpot on low.

  2. Cook 6-8 hours, or until the beans are tender.

  3. Taste for salt and pepper.

  4. Remove the whole chicken pieces and cut them up, return them to the crockpot.

This chili is very good just as it is but if you want to jazz it up you can serve it with fresh cilantro, fresh jalapeños, chopped avocados, chopped raw onions, and a dab of sour cream. YUM!
