If you’re anything like me and my husband, you often have leftover rice from previous meals in your refrigerator. This slightly dry rice is perfect for fried rice, but have you tried rice patties?
In a bowl, combine leftover rice, parmesan cheese, salt, pepper, garlic, and an egg to act as the binder (depending on how much rice you’re using, you may need 2 eggs). Form the mixture into patties and fry in a shallow pan of olive oil until golden brown and crispy. It’s delicious!

You can add different spices and flavorings to these patties to compliment whatever food you are serving with them. I like to add turmeric and onion and serve these with chickpeas in curry broth.
