Walnut Brittle


Ooey, gooey, and oh so delicious!

You may have read in previous posts that my husband loves Costco. As a result, I am often looking for ways to use up large quantities of food items before they go bad. The latest thing is his obsession with buying giant bags of walnuts. Nuts must be used, or frozen, or they will become rancid because they are filled with oils - good-for-you oils but oil goes rancid after a while. So, here’s my new ‘walnut use’ recipe that I hope you enjoy!



  • 2 cups of sugar

  • ½ cup of water

  • 1 stick of butter

  • ⅓ cup of light corn syrup

  • ½ teaspoon of baking soda

  • 1 ½ to 2 cups of walnuts

  • Candy thermometer*

  1. In a heavy saucepan combine the sugar, water, butter, and syrup. Bring to a boil.

  2. Cook over high heat, stirring until it turns light brown, and registers 300 degrees on a candy thermometer. It takes about 10-12 minutes.

  3. Remove from the heat and carefully add the baking soda. It will bubble up.

  4. Quickly stir in the nuts.

  5. Working quickly, spread the candy into a thin layer onto a nonstick pan, or use a Silpat.

  6. Cool completely, then break into pieces.



*You can make this without a candy thermometer using the old fashioned “hard crack stage” (which is 300-310 degrees) by dropping a bit of the hot syrup into water. If it immediately forms a hard ball, it is ready. A thermometer is easier and you can buy one anywhere you buy groceries.
