My husband recently returned from Costco with a gigantic bag of walnuts. Like most men he likes large quantities of just about anything … so here we were with 5 pounds of shelled walnuts.
Here’s an easy recipe I found, using walnuts, that’s easy to make and everyone enjoys!
Walnut Bars
For the crust:
1 cup of flour
¼ cup of powdered sugar
¼ teaspoon of salt
½ cup of cold butter
Preheat the oven to 350 degrees.
Using a pastry blender, or a fork, mix the crust ingredients together.
Spread the crust mixture in a lightly greased 8x8 inch pan. Press down to make a crust.
Bake in the oven for about 15 minutes, or until the edges are just starting to brown slightly.
Remove from the oven and set aside.
For the filling:
1 cup of light brown sugar
1 egg
1 teaspoon of vanilla
½ cup of flour
¼ teaspoon of baking soda
¼ teaspoon of salt
1 ½ cups of chopped walnuts
Mix all of the filling ingredients, except walnuts, until smooth. Add the walnuts and mix together.
Spread the filling over the pre-baked crust.
Bake about 25 minutes, or until everything is nicely browned.
Cool completely before cutting.
