Tiramisu

Homemade Tiramisu Perfection <3

Tiramisu is my husband’s favorite dessert. It also happens to be incredibly simple to make and looks very impressive at a pot-luck! There are many versions of tiramisu- some include eggs, baking, and other steps. I like this one because it is very simple and easy to customize. Throw in some raspberries or white chocolate curls for an

extra special version!

You will need:

  1. ⅓ cup + 2 tablespoons granulated sugar

  2. 8 ounces mascarpone cheese

  3. 1 ¼ cup heavy cream

  4. Cocoa powder (for sifting over the top)

  5. Semi-sweet chocolate (for grating between layers)

  6. 1 package lady finger cookies

  7. 2 cups strong brewed espresso, cooled to room temperature

Didn't eat this all by myself...or did I??

In a mixer, blend together cream and sugar until the mixture comes together loosely. Once this happens, add mascarpone cheese and whip until stiff peaks form. Be careful not to over whip, but this mixture should be firm.

Dip the lady finger cookies into the espresso, being careful not to leave them to soak for too long. Cookies should absorb the coffee but not crumble apart. In a baking dish (glass, if you have one), layer the bottom with soaked cookies.

Cover this layer with half of the cream mixture. Using a microplane, grate the chocolate over the cream. Continue layering cookies, cream, and chocolate shavings until you have used all of the ingredients.

Upon the last layer of cream, sift cocoa powder over the top for a finished look. Cover the dessert and let it set up in the refrigerator for 4-6 hours before serving.

This is a great make-ahead dessert...in fact, I think it tastes even better the next day!

We won't judge you if you eat it right out of the pan!
