Tatertot Casserole



Birthdays are a big deal at my office. Each month, we all gather around in the conference room to enjoy breakfast together; everyone brings in a dish to share. This tatertot casserole was an instant hit when I made it last month. It’s suuuuuper easy and a real crowd pleaser.


You can customize it with different meats and spices, different cheeses- heck, you could even throw in some vegetables if being healthy is your thing ;)


You will need:

· 1 lb ground breakfast sausage (Italian sausage or bacon would be good too!)

· 2 ½ cups cheese (I used a mixture of cheddar and six cheese Italian)

· 4-5 eggs

· 2 cups whole milk (don’t use skim)

· Salt, pepper, onion powder

· 2 lbs frozen tater tots

· Chives for garnish

· 13 x 9 baking dish (I sprayed mine with Pam before putting any ingredients in)

1. Preheat your oven to 350 degrees.

2. Cook sausage through in a skillet. Drain and place in the bottom of your baking dish.

3. Sprinkle half the cheese over the sausage.

4. In a big bowl, hand whisk together the eggs, milk, and seasonings.

5. Pour egg mixture evenly over the sausage mixture in your baking dish.

6. Place frozen tater tots on top of the casserole.

7. Bake (uncovered) at 350 for 35 minutes. Remove casserole and add the remaining cheese to the top. Place back in oven for another 10-15 minutes, or until cheese is bubbly and tots are browned.

8. Garnish with chives (parsley would be good too!).

If you like a little kick, adding garlic powder or red pepper flakes would be a nice touch.
