Squash Casserole


SO yummy and perfect for Thanksgiving or Christmas!

My mom used to make this easy casserole and we still love it all these years later! It is simple and requires just a few ingredients. Like many of my recipes, it doesn’t have exact measurements but it is easy enough to figure out.


  • 4-6 yellow squash, sliced into circles

  • 8-10 slices of bacon, cooked crisp and crumbled

  • ½-1 cup of dry bread crumbs

  • ½ cup chopped onions

  • Salt and pepper

  • Butter


  1. Cook the bacon, crumble and set aside.

  2. In the same skillet cook the onions and set aside.

  3. In an ovenproof casserole dish create layers of squash, onions, breadcrumbs, and bacon.

  4. Top with several pats of butter, salt, and pepper.

  5. Cover with foil and bake at 350 degrees for 30-45 minutes, until the squash is tender.


If you like more bacon - add it. If you want to top this with cheese - go ahead. As I said, this is easy! (A note from Sarah: This simple dish was a huge hit at a dinner party recently. It is deceptively simple and crazy delicious!)
