Pork is one of the most versatile ingredients around. You can use it for sandwiches, schnitzel, main course, side dishes...however you like to eat it!
One of my favorite ways to prepare pork is in the slow cooker. This method does not require a lot of hands-on time and the end result is a truly delicious and tender meal. Plus, pork butt is generally very affordable, especially when it goes on sale!
To cook pork in a slow cooker, add ¼ cup of water and 2 tablespoons of olive oil to the bottom of the insert. Heavily season pork with salt, pepper, onion powder, garlic, cayenne pepper, and cumin. Set into insert and cook on low for 6-8 hours, until pork is cooked through.
This is a stunning dish that requires very little work- a win-win!
I like to shred the pork using two forks, then serve it tossed in BBQ sauce with a side of fried okra. Enjoy!
