Is there anything more satisfying than a simple quesadilla? They’re ooey, gooey, and filled with tasty flavors and spices...plus, they’re ready in minutes! You can make quesadillas any flavor you want by mixing up the protein and toppings included in them.
For these beauties, I used slow cooker chicken thighs as one of the fillings. I simply combined a can of fire roasted tomatoes, a can of diced green chiles, some cumin, salt, pepper, and chicken thighs in the slow cooker on low for about 6 hours. But if you’re short on time, you could easily use a pre-roasted chicken from the deli.
I like to cook my quesadillas on the panini press, rather than the cooktop. This gives them a nice even cook and crispy edges.
Here are some of my favorite things to include in quesadillas:
Cheese (duh!)
Jalapenos
Fresh tomatoes
Shredded carrots
Greens
Goat cheese (don’t judge until you’ve tried a goat cheese/arugula/tomato quesadilla!)
These are the perfect weeknight meal or snack. Feel free to mix up the recipes- pizza quesadillas are always fun!- and use what you have in your pantry.
