When my husband and I were dating we used to frequent a Pensacola bar called Seville Quarter which was really four different bars in one gigantic building. One bar played easy listening, one was a disco, one was called Rosie O’Grady’s and I am not sure what that was, and the last one was an outdoor bar famous for its homemade fresh fruit daiquiries. (Nothing says ‘healthy’ like alcohol mixed with fruit :-)
I was feeling nostalgic recently and decided to try and reproduce this blast-from-our-past.
Here’s what I came up with:
Fresh Fruit Daiquiris
2 cups fresh strawberries
4 shots of rum
Juice of 1 lime
1-2 cups of ice
Simple syrup
Simple syrup:
Mix one cup of sugar with one cup of water in a pot. Cook over medium-high heat, stirring constantly, until the sugar is completely dissolved. Use about ¼ - ½ cup for the daquiri’s. Store the rest in the refrigerator for another use.
Daiquiris:
Add the strawberries, rum, lime juice, and 1 cup of ice to a blender. With the blender running, slowly add ¼ cup of the simple syrup and the remaining ice a little bit at a time. Stop the blender and taste for sweetness. If you want it sweeter, add more syrup. Continue adding ice until the drink reaches your desired consistency.
