Roasted Vegetables



We are fortunate to live in a part of the country where fresh vegetables are plentiful all year long! One of the easiest and most delicious ways to prepare them is roasting.


Here’s all you need to know to make a tray of healthy and yummy vegetables:


Roasted Vegetables

  • Assorted vegetables, cut into bite sized pieces

  • Olive oil to drizzle on top

  • Salt and pepper

  1. Preheat the oven to 350 degrees.

  2. Line a sheet pan with foil, or parchment paper.

  3. Cut all of the vegetables into bite sized pieces.

  4. Drizzle olive oil over all of the vegetables and season with salt and pepper.

  5. Place the sheet tray in the oven and cook about 20 minutes, or until vegetables are tender.

You can use most any vegetable for this dish - just remember that harder vegetables (like carrots and celery) will take longer to cook and softer vegetables (like squash and zucchini) will cook in less time.
