I love potatoes any way they come: baked, boiled, mashed, and (of course) French fries! This is easy and everyone loves them because they are crispy on the outside and soft on the inside.
Roasted Potatoes
Cast iron skillet
4-5 potatoes, cut into 1 inch slices
2 tablespoons of butter
2 tablespoons of olive oil
4-5 garlic cloves, smashed
½ cup of chicken stock
2 sprigs of fresh rosemary
Salt and pepper
Preheat the oven to 400 degrees.
Melt the butter in the skillet with the olive oil.
Salt and pepper the potato slices. Lay the potatoes in the hot skillet and sear them until they are nicely browned on the first side. Turn the potatoes over so the browned sides are up.
Add the smashed garlic to the skillet and cook about 3 minutes.
Add the chicken stock and rosemary.
Put the skillet in the oven and cook about 30 minutes or until the potatoes are fork tender.
