Puff Pastry Pizzas


These are HUGE crowd pleasers!

Do you have these in your freezer, like me? I love puff pastry because it is so versatile and you can create a simple meal, appetizer, or dessert in just a few minutes … and they make you look super talented in the kitchen!!


Puff pastry is in the freezer section of your grocery store and comes in two types: sheets and shells. I used the sheets to create these simple pizzas appetizers you see here. You can top them with anything you like: cooked sausage or other ground meat, roasted chopped vegetables, cheeses, and on and on. You are really only limited by your own imagination :-)



I like keeping puff pastry in my freezer because it thaws quickly and I can toss a few ingredients on them, bake, and create a quick healthy snack, or an appetizer if someone stops by. If it is just me, I can create a whole meal for myself in a few minutes!


The shells, when baked, puff up and can be filled with just about anything you’d like to put in them. I think of these as bread bowls and you can fill them with chicken pot pie, chili, etc.


You can also bake them, cool them off a bit, add fresh fruit and whipped cream and you’ve got an instant dessert!


Puff Pastry Pizzas: Artichoke & Parm, 3 Cheese, Pepperoni

  • 1 sheet of thawed puff pastry

  • ¼ cup of chopped artichokes

  • ½ cup of parmesan cheese

  • 2 slices of provolone cheese

  • ½ cup of mozzarella cheese

  • 8 slices of pepperoni

  1. Preheat the oven to 425 degrees. Grease and lightly cornmeal dust a baking sheet.

  2. Cut the puff pastry into 3 even pieces. Lay the pieces on the greased and lightly cornmeal dusted baking sheet.

  3. On the first piece, add the artichokes and top with ½ of the parmesan.

  4. On the second piece, add the provolone, the remaining parmesan, and ½ of the mozzarella.

  5. On the third piece add the remaining mozzarella and all of the pepperoni.

  6. Bake about 10-15 minutes or until lightly golden brown.






Other options:

  • Crumbled goat cheese, topped with an arugala salad after it comes out of the oven

  • Crumbled blue cheese and spicy buffalo chicken

  • Olive tapenade and parmesan

  • Thick spaghetti sauce and parmesan

  • Shaved corned beef, swiss, and sauerkraut

  • Shaved roast beef, swiss, and horseradish

  • Thinly sliced apples, cinnamon and sugar

You can basically put anything you want on puff pastry and make something delicious!!

I have not done much with puff pastry myself, but I do like it alot! I actually had some in my freezer and when the power was out for 3 days I pitched it and haven't re-stocked yet, but I agree that it's one of those very handy items t have on hand.
