Pesto is a delicious sauce that originates in Italy. It is simple, delicious, and refreshing, especially good for a quick summer meal.
Ingredients:
1 cup of fresh basil leaves, washed and dried
4 cloves of fresh garlic, use less if you don’t love garlic like my family
1 cup walnuts
1 cup grated parmesan cheese
2 pinches of red pepper flakes
Salt and pepper, to taste
Olive oil - up to one cup
Put all the ingredients, except olive oil, into a food processor or blender. Turn it on medium speed while slowly drizzling in the olive oil. Continue adding olive oil until the pesto reaches the level of thickness/thinness you like. Store in a covered dish in the refrigerator.
How to use pesto:
1. Add a few tablespoons to hot cooked pasta for a quick and easy dinner.
2. Add to salad dressing with additional olive oil and vinegar.
3. Toss pesto into a cold pasta salad.
4. Add several teaspoons of pesto to a piping hot bowl of soup.
5. Add to almost any Italian sauce where the delicious flavor of basil will enrich the sauce.
