Pizza chicken is my new favorite weeknight dinner! It’s easy, it’s delicious and most importantly, it’s a real crowd pleaser. The cheese becomes browned and bubbly and the chicken retains its moisture throughout the cooking process, thanks to being smothered in a delicious sauce.
This fun mash-up can be served with roasted broccoli and garlic bread, and it pairs great with a caesar salad.
Here’s what you’ll need:
Chicken breasts
1 jar pizza sauce (homemade is obviously best, but jarred works just fine)
1 cup shredded mozzarella cheese
1 cup shredded parmesan cheese
2 Tbls. Italian seasoning
2 Tbls. fresh basil, chiffonade
Sliced pepperoni
Preheat the oven to 375 degrees.
Use a knife to cut a slit in the side of your chicken breast, to allow for stuffing. Be careful!
Stuff the chicken with pepperoni and mozzarella cheese. Place in an ovenproof baking dish.
Sprinkle chicken with Italian seasoning mix. Lay more pepperoni slices on top of chicken.
Cover chicken breasts in pizza sauce. Top with remaining cheeses.
Bake in the oven for 25-35 minutes or until chicken is cooked through.
When you remove the chicken, top with fresh basil before serving.
