This is a delicious and summer-y meal that combines salty and sweet flavors for the perfect bite. I served this dish with rice and broccoli; it would also be delicious over orzo with sauteed summer squash or asparagus!
You will need:
Chicken breasts
1 medium-sized ripe peach, diced
1 Tbls sambal olek or preferred hot sauce (sriracha would work)
1 tsp grated ginger
1 tsp brown sugar
1 tsp rice wine vinegar
¼ cup water
Cook the chicken breasts; remove from skillet.
In a bowl, combine sambal, water, and sugar together. Stir until smooth and set aside.
In the same skillet you cooked the chicken in, add ginger and peach. Cook until ingredients start to brown.
Add the sambal mixture to the pan and cook until the sauce thickens slightly. Add the vinegar and stir to combine.
Top your chicken breasts with the peach salsa and voila!
