This quick and easy appetizer is fancy enough to serve to guests and simple enough to make as a healthy snack. Salty and tangy, tapenade can be used as a dip or as a delectable sandwich spread!
You will need:
2 C assorted olives
2 whole anchovies
2 T fresh garlic
2 T capers
1 T lemon juice
2 T olive oil
salt and pepper, to taste
red pepper flakes, to taste
Put everything in the food processor until chopped. Tapenade can be chunky or more
spreadable, as you like it. Add olive oil until the tapenade reaches the thickness you like.
Serve with crackers or crostini.
Crostini
Cut a baguette into 1/4 inch slices and place on a cookie sheet. Lightly drizzle with olive oil and sprinkle with salt and pepper. Place in a 200 degree oven until dry and crispy.
Depending on your oven this could take up to an hour. Be patient and don’t turn up the oven! These little toasts will burn quickly!
