Okra + Tomatoes



This is a simple side dish that I grew up eating in the summer when okra and vine ripened tomatoes were plentiful. I think it is delicious and takes just a few simple steps to create a healthy side. You can also serve it on top of rice for a complete meal.


Okra and Tomatoes

  • 4 cups of fresh sliced okra

  • 4 fresh whole tomatoes, chopped

  • ¼ cup of finely chopped onions

  • 1 tablespoon olive oil

  • 1 teaspoon freshly minced garlic

  • Salt and pepper to taste

  1. Heat the olive oil over medium high heat, add the onions and cook until tender.

  2. Add the sliced okra, tomatoes, and garlic and cook until the okra is tender, about 20 minutes.

  3. Season with salt and pepper.

Oftentimes people will tell me they don’t like okra because it is slimy but here’s the trick: cook okra with an acid, like tomatoes, and it will come out slim-free and delicious!!
