Oh So Easy Chicken or Beef Stock


The best part? Your house will smell delicious!

This is a recipe I make all the time because stock is useful for so many dishes! It is easy to make and can enrich almost anything you cook. Whenever I roast a chicken I save all the bones to make stock, or I ask my local farmer to save bones for me. A delicious stock is so easy to make and far more cost effective than buying prepared stock from the

store. Making your own stock allows you to control the ingredients adding or subtracting as you like.


Ingredients:

4 lbs. chicken bones (any combination of backs, necks, and feet) OR beef soup bones

2 small onions, peeled and quartered

4 small carrots, cut into 1-inch pieces

4 stalks celery, cut into 1-inch pieces

1/2 bunch flat-leaf parsley

1 bunch fresh thyme

1 head garlic, halved crosswise

1 tsp. black peppercorns

2 bay leaves

2 tsp. salt


Directions:

Put everything in a crockpot and cover with water. Turn crockpot on low and leave it for at least 12 hours. (Your whole house will start to smell delicious in a few hours!)


Put a fine-mesh strainer over another large pot and pour broth through it; discard solids. Put the lid on the pot and cool the stock in the refrigerator for several hours.


Pour stock into smaller containers (I use 1 quart containers) and freeze or store in refrigerator to use throughout the next week.


Here’s what you can now do with stock:

1. Use it in place of water to cook rice or potatoes.

2. Use it as a base for most any soup.

3. Use in a stir-fry to create a delicious pan sauce.

4. Use in place of water when cooking vegetables.

5. Use for making risotto.

6. Just drink it because it is delicious and oh-so-good for you!
