Cauliflower is a vegetable that doesn’t have a ton of flavor when it’s raw...but cook that veg and it has a wonderful flavor unlike any other. I have riced and fried cauliflower, but my favorite way to prepare it is to roast it in the oven.
This recipe is simple yet full of good for you flavors that make it the perfect side dish.
You will need:
1 head of cauliflower, diced
Zest of half a lemon
Juice of half a lemon
Fresh parsley
Salt and pepper to taste
Diced garlic
4 Tablespoons olive oil
Preheat your oven to 425 F. On a sheet pan, toss together cauliflower, 3 Tbls. olive oil, garlic, salt and pepper. Roast in the oven for 15 minutes, then flip the cauliflower florets. Roast for another 10-15 minutes or until the cauliflower is tender (keep your eye on your pan- you want the veg to have a nice brown caramelization but not to burn). Once cooked, toss cauliflower with remaining 1 Tbls. Olive oil, lemon zest, lemon juice, and as much parsley as you like. Serve warm.
Pro-tip: this would be a great dish to bring to a potluck, as it will complement virtually any main course and can be served hot, warm, or cold.
