Mexican Patatas

I don’t have a picture of these because I literally ate them right out of the bowl- they are that good!

You will need:

  • 4-5 small golden potatoes

  • 4 Tbls grated cotija cheese

  • 1 clove grated garlic (get this as close to a paste as you can)

  • Salt and pepper

  • Olive oil

Preheat the oven to 450. Slice the potatoes into wedges or rounds, whichever you prefer. Drizzle with olive oil, salt, and pepper. Roast in the oven for 20-24 minutes until tender. Remove from oven. In a large bowl, toss potatoes, cheese, and garlic together until combined. Serve immediately.

These potatoes are salty and garlicky and addictive!
