I don’t have a picture of these because I literally ate them right out of the bowl- they are that good!
You will need:
4-5 small golden potatoes
4 Tbls grated cotija cheese
1 clove grated garlic (get this as close to a paste as you can)
Salt and pepper
Olive oil
Preheat the oven to 450. Slice the potatoes into wedges or rounds, whichever you prefer. Drizzle with olive oil, salt, and pepper. Roast in the oven for 20-24 minutes until tender. Remove from oven. In a large bowl, toss potatoes, cheese, and garlic together until combined. Serve immediately.
These potatoes are salty and garlicky and addictive!
