Meatloaf


All the ingredients go in the bowl

One of my favorite movies is A Christmas Story and there is a scene where the youngest child is saying, “Meatloaf, beetloaf, I hate meatloaf!” while his goofy mother tries to cajole him into eating. It’s really funny but is not a sentiment my husband and I share with him. We love meatloaf!


My recipe is simple and pretty darn good….


You will need:

  • 1 ½ pounds of ground chuck

  • ¼ cup dry bread crumbs

  • ¼ cup parmesan cheese

  • ¼ cup finely chopped onion

  • 1 beaten egg

  • Salt and pepper to taste

  • ½ pound of thin sliced bacon

  1. Dump everything into a mixing bowl and mix gently by hand.

  2. Form into a loaf and put on a sheet pan.

  3. Cut the strips of bacon in half and wrap around the meatloaf.

  4. Bake at 350 degrees for an hour. Check with a meat thermometer for doneness.

  5. Allow to cool for about 15 minutes, slice and enjoy.



Leftover meatloaf makes a yummy sandwich the next day too!
