One of my favorite movies is A Christmas Story and there is a scene where the youngest child is saying, “Meatloaf, beetloaf, I hate meatloaf!” while his goofy mother tries to cajole him into eating. It’s really funny but is not a sentiment my husband and I share with him. We love meatloaf!
My recipe is simple and pretty darn good….
You will need:
1 ½ pounds of ground chuck
¼ cup dry bread crumbs
¼ cup parmesan cheese
¼ cup finely chopped onion
1 beaten egg
Salt and pepper to taste
½ pound of thin sliced bacon
Dump everything into a mixing bowl and mix gently by hand.
Form into a loaf and put on a sheet pan.
Cut the strips of bacon in half and wrap around the meatloaf.
Bake at 350 degrees for an hour. Check with a meat thermometer for doneness.
Allow to cool for about 15 minutes, slice and enjoy.
Leftover meatloaf makes a yummy sandwich the next day too!
