Sometimes this is called Italian Wedding Soup but we just call it delicious! It is simple and makes a yummy quick soup that tastes even better the next day!
Meatballs
½ pound of ground beef
1 egg
2 tablespoons breadcrumbs
1 tablespoon parmesan cheese
½ teaspoon fresh basil
½ teaspoon onion powder
Salt and pepper to taste
Mix everything together and form into small meatballs using about 1 to 2 teaspoons of the meat mixture. Set aside.
Soup
5-6 cups of chicken or beef stock
2 cups of fresh spinach or kale
1 cup orzo
⅓ cup of diced carrots
⅓ cup of chopped celery
⅓ cup of diced onions
2 chopped tomatoes
3 slices of bacon
Parmesan for topping the soup
Cook the bacon in a stockpot until crispy. Remove and set aside.
Add the carrots, celery, and onions to the stockpot and cook until tender.
Add the stock to the pot along with the chopped tomatoes. Bring to a low boil.
Add the meatballs and the orzo and lower the temperature to medium. Stir slowly.
When the orzo is cooked add the spinach (or kale) and cook just a few minutes until slightly wilted.
Add more stock if needed. Taste for salt and pepper.
Top soup with crumbled bacon and parmesan cheese.
