2 eggs
¾ teaspoon vanilla extract
⅛ teaspoon salt
⅓ cup sugar
½ cup flour
1 tablespoon orange zest
¼ cup melted and cooled butter
Optional: melted chocolate and finely chopped nuts for decoration
Preheat the oven to 375 degrees. Grease and flour a madeleine pan.
Melt the butter and set aside to cool.
In a mixing bowl, beat the eggs, vanilla, and salt on high until light and fluffy.
While beating, add the sugar and continue beating until it turns pale and thick - it takes about 5-10 minutes.
Fold in the flour about ⅓ at a time. Mix well but gently.
Add the orange zest and the butter, continuing to fold it all together gently.
