Korean inspired beef bowls are a great weeknight meal: filled with delicious vegetables and covered in a sticky sweet and salty sauce, this meal is a crowd pleaser.
You will need:
Ground beef
Broccoli slaw*
Onion
Garlic
Soy sauce
Sesame oil
Brown sugar
Red pepper flakes
Ground ginger
Rice
Eggs
Scallions
Basil
Peanuts
Cornstarch
Gochujang
*You can use anything you like- chopped cabbage, sliced eggplant, diced carrots- all of that would be delicious. Adjust your cooking time according to how hard your vegetables are.
Cook the rice to package instructions. Set aside.
Add 2 teaspoons of sesame oil and 1 diced onion to pan. Saute until onion is translucent.
Add chopped garlic (I am always heavy on the garlic- 3-4 cloves- but add as much as you like), broccoli slaw, gochujang, and ground beef to pan. Cook until ground beef is no longer pink.
In a bowl, whisk together ½ cup of soy sauce, 1 tablespoon brown sugar, 1 teaspoon red pepper flakes, 3 teaspoons ground ginger, and 1 tablespoon of cornstarch. Pour over meat mixture. Let simmer in pan until the sauce become sticky.
Serve meat over rice. Top with scallions, basil, and peanuts. I like to add a runny fried egg to mine for extra creaminess, and of course some sriracha for more heat.

Jennifer, I do not eat eggs and always leave them off. They do add a nice bit of protein but I simply cannot eat them. Gochujang is in the ethnic food section at Publix. Slightly spicy but more flavor than heat! Cheers!
That sounds very yummy and something I am going to attempt! Can it be made without the egg? Not an egg eater, but I love all the other ingredients. I would like to ask what is Gochujang and where can I find it? Thanks!
