Confession: I don’t always cook.
Double confession: I don’t always cook...and sometimes I fake cook.
I know- I know!
...But the week’s are long, and every now and again, even those of us who love the kitchen need a good old fashioned break.
Recently, I was on my own for dinner, and I “made” the following:
Spinach and tomato quiche (pre-made from the deli)
Rosemary potatoes (Alexia frozen ones)
Romanesco- this I actually made. I chopped it up, threw it on a sheet pan with some olive oil and salt, and roasted it until tender.
It was delicious, and it only required a small amount of heating up on my end.
There’s nothing wrong with taking shortcuts when you need to. Meals that are quick can still be healthy and satisfying- you just have to shop smart for those items. Each week when I do the grocery shopping, I try to factor in a few easy to serve items just in case the week gets away from me. Frozen vegetables are always good to have on hand, maybe a few fresh ingredients for a big salad, add in some protein and voila! You’ll be eating dinner before you know it without stressing yourself out.
And who doesn’t love that?
