Jambalaya is definitely a “go-to” meal at our house because it is easy to make, hearty, and always delicious. I cheat a bit by using a packaged mix from Zatarain’s which makes the dish even easier. I also find that if you have a few pieces of leftover meat you can make them go father by tossing them into the pot. It’s meat and rice...what’s not to enjoy?! Bon apetite!
You will need:
1 box of Zatarain’s jambalaya mix
¼ cup each: chopped onions, bell peppers, celery
1 pound of ground sausage or ground beef
1 pound sliced link sausage, like Hillshire Farms
2 chicken breasts cut into bite sized pieces
3 cups of water, or broth
1 tablespoon oil
Preheat the oven to 375 degrees.
Add the oil to a dutch oven and heat to medium high. Add the onions, bell peppers, and celery and cook about 5 minutes.
Add the sausage and cook another 5 minutes.
Add the ground sausage/beef and cook another 5 minutes.
Dump the contents of the Zataran’s and the 3 cups of water into the pot.
Stir to combine.
Cover with a tight fitting lid and put in the oven for 35-45 minutes. Check after 35 minutes and if the rice is cooked through it is ready.
Serve with a simple salad and (our favorite) corn muffins.
