When the summer weather really kicks into high gear in the south, it is simply too hot to have an outdoor picnic. Brent and I find ourselves enjoying indoor picnics quite frequently this time of year. We lay everything out on the counter and enjoy the outdoors...from the window :)
Here is one of our favorite indoor picnic meals:
Grilled Italian sausages served with caramelized onions and spicy mustard
Cucumber and tomato salad
Fresh fruit
I like strawberries this time of year (who doesn’t??) but watermelon, pineapple, peaches...anything is fair game. Our cucumber and tomato salad is flavored with olive oil, balsamic vinegar, capers and their juice, a squeeze of fresh lemon, and basil, but you can tailor it however you like.
PS- Publix was out of their delicious bakery-made hot dog buns on this particular day...they are worth the splurge if you see them in the store!
