Over Christmas, I received a beautiful cookbook called Indian-ish by Priya Krishna. This is an incredible cookbook, filled with vibrant recipes and delicious twists to Indian classics (looking at you, feta paneer!). I will do a full review of the book soon.
For now, I want to share with you a recipe from the book that I took some liberties with to make my own (imitation is the sincerest form of flattery, right?).
You will need:
Cauliflower rice (you can make your own, but why not enjoy the ease of frozen?)
1 bunch asparagus, cut into pieces
Handful of cherry tomatoes, halved
1 Tbls. cumin seeds
2 Tbls. olive oil (coconut oil works, too)
1 yellow onion, diced
1 Tbls. minced garlic
⅓ cup zucchini, diced
Juice of 1 lime
1 Tbls. fresh cilantro
Cook the cauliflower rice according to the package.
Over medium heat, toast the cumin seeds in olive oil for 1 minute.
Add the asparagus, onions, and zucchini. Saute until cooked through.
Add the garlic and cook for 2 minutes.
Pull the mixture off the heat. In a large bowl, combine the cauliflower rice, cooked vegetables, raw tomatoes and lime juice. Garnish with cilantro.
This dish can be served hot or cold and is a perfect work-day lunch!
