It’s no secret that I am a huge Ina Garten fan, and this recipe is a great example of why. Lemon garlic chicken can be jazzed up with fancy sides for a date night in, or sliced and served simply for a satisfying lunch. Hot or cold, these chicken breasts are juicy and flavorful.
Modified Lemon Garlic Chicken Breasts
You will need:
Chicken breasts
Minced garlic (I like a lot- a whole head of garlic- but you should adjust this to your tastes)
⅓ cup white wine (use what you will want to drink later!)
Zest of half a lemon
Juice of half a lemon
Dried Italian seasoning
Salt and pepper
Extra virgin olive oil
Preheat the oven to 400 degrees. In a skillet, warm 1 tablespoon of oil with the minced garlic. Cook for approximately 1 minute- don’t let the garlic brown (or worse, burn!). This is just to unlock and deepen the flavors of the garlic. Add garlic and leftover oil to the baking dish. Mix in wine, zest, juice, and herbs. Lay chicken on top of this mixture. Brush with oil and season with salt and pepper. Place baking dish in oven. Cook until chicken is cooked through, approximately 30-40 minutes depending on the thickness of the breast.
I served mine with roasted cauliflower and strawberries, but as I said above, this is a versatile meat that you can use for just about anything!
