Leftovers are a divisive topic: people either love them or don’t eat them. While I don’t like eating the same dish over and over, I also don’t like the idea of throwing away perfectly good food...what a waste! Over the years I have learned some tips and tricks for reimagining leftovers into creative new dishes to keep things interesting.
If you’re serving BLTs on Monday, have tacos on Tuesday! This is a great way to use the full head of lettuce and all of the tomatoes. (OR add hard boiled eggs and avocados to your lettuce + tomatoes + diced bacon for an on the fly Cobb salad.)
Rice is a common side dish with pork chops, salisbury steaks, and more. The next night, toss your leftover rice with diced vegetables, ginger, garlic, and soy sauce for a delicious and easy fried rice!
Serving sauteed vegetables? Dice them into tiny pieces and add them to the next morning’s omelette for an extra helping of veggies in the morning.
Fruit salad is a staple during the summer at our house. Blend your extra fruit into a tasty smoothie (and toss in any uncooked greens you still have laying around for an extra boost!)
Roasted chicken served with gravy and mashed potatoes one night can become chicken salad with a few simple tweaks. Don’t be afraid to pick the whole bird and use different bits in different dishes! For instance, I love chicken thighs done in the slow cooker, and chicken breasts for sandwiches
By tweaking a few flavors and using a little imagination, your leftovers can take on a delicious new life of their own.
