Homemade Snickers

Lately when I am in the kitchen, I have an urge to make candy. This is something I usually save for the holidays, but I am beginning to rethink that...there’s something so special about walking into the kitchen on a weekday and finding homemade treats!

I am not a Snickers fan, but my husband LOVES them, and he swears these taste just like the candy bars. Feel free to adjust this recipe as you like, incorporating different nuts, flavors, etc.

BE CAREFUL when you work with sugar, especially at these heats. Not only can the ingredients easily burn, they can burn you, too!

These bars are made by layering each piece in a parchment lined baking tray.

You will need:

  • 1 cup milk chocolate chips

  • 1 cup semisweet chocolate chips

  • ¾ cup peanut butter, divided into ¼ cups

  • 1 cup granulated sugar

  • ½ stick of butter

  • ½ cup heavy cream, divided into ¼ cups

  • 1 bag soft caramels, unwrapped

  • 7 oz marshmallow fluff

  • 1 cup salted peanuts

Line a 9 x 13 baking tray with parchment paper. Melt together milk chocolate chips and ¼ cup peanut butter until smooth. Spread this on parchment paper. Put in freezer until set (4-6 minutes).

In a pot over medium heat, combine sugar, butter, and ¼ cream. Bring to a boil. Once boiling, set a timer for 6 minutes (this will cause the sugar to brown, creating a depth of flavor). Stir occasionally, being VERY careful. After the 6 minutes, remove from heat and stir in ¼ peanut butter and all the marshmallow fluff until incorporated. Spread this nougat mixture on top of the chocolate layer evenly. Place back in the freezer to set up (4-6 minutes).

Melt together ¼ cream and caramels until smooth. Drizzle evenly on top of the nougat layer. Add the salted peanuts in an even layer. Return to the freezer to set up (4-6 minutes).

Melt together semisweet chocolate chips and ¼ peanut butter. Spread evenly over the top of the bars. Return to the freezer and allow to set up for 25-30 minutes, or until the top chocolate layer is completely set.

Remove from the freezer. Using a sharp knife that is sprayed with non-stick cooking spray, slice the tray into bars and move to the serving plate. This process should be done quickly to avoid melting. Store the bars in the refrigerator until it is time to serve.

Enjoy!
