Do you ever open your refrigerator and realize you have ‘stuff’ in there that you need to use up? Stuff that will be a science experiment in another few days? Me too! Things get pushed to the back or forgotten very quickly at my house and I simply hate food waste so I’ve become very creative at reinventing and reusing some of the interesting finds in my refrigerator! (Feels like an archaeological dig some days!!)
Of course, I’d never suggest using something that has gone bad! This is just about using up the good bits and pieces, or leftovers.
This recipe is so easy and with a few small ingredients you can create something everyone will enjoy! Here’s my bacon cheeseburger hot pockets:
1 package puff pastry dough
1 cup of ground beef, cooked
2 ounces of shredded cheese
¼ of a chopped onion
2 strips of cooked chopped bacon
Salt and pepper to taste
1 beaten egg or a few teaspoons of water
Roll out the puff pastry and cut into circles using a cookie cutter or glass. Cut an even number of circles so you have a top and a bottom.
Mix together the meat, cheese, onion, and bacon.
Place ½ of the puff pastry circles on a sheet tray. Top each one with some of the meat mixture leaving a small rim around the edges to attach the top pastry.
Paint the edges of the meat-filled pastry and top with the additional pastry.
Cut a steam vent in the top of each pastry.
Bake in a preheated 350 degree oven until golden brown.
This is so simple and you can use virtually anything for the inside! Chicken, vegetables, leftover barbeque, assorted cheeses, leftover taco mix, and on and on. You are only limited by your imagination!
