We went on the hunt for special recipes to celebrate St. Patrick’s day, and we found something delicious! Now, is this a traditional Irish meal? No. But it is made with Guinness.
Speaking of Guinness, you will be poaching the raw sausages in Guinness first, then giving them a final cook on the grill. The poaching liquid gives the sausages a depth of flavor and juiciness that grilling alone won’t, but throwing them on the grill at the end gives them that alluring color and crunch we’re looking for in a sausage.
You could serve this delicious sandwich with a side of colcannon or braised cabbage. The sausages and toppings would be just as scrumptious served as an open faced sandwich or (dare we say it??) over pasta. We enjoyed this wonderful sandwich just as it is written here but you could mix it up and serve it with dill relish, swiss cheese, or a luscious gooey cheese sauce.
Guinness bratwurst with spicy mustard and tomato relish
For the bratwurst:
8 bratwurst
2 bottles of Guinness, the lightest variety you can find
1 whole onion, cut into quarters
Salt and pepper to taste
Bring the Guinness to a simmer and add the brats and the onion. Simmer until the sausage is cooked through for about 15 minutes.
Heat a grill to medium and char the sausages and onions to a nice golden brown.
For the rolls:
8 pretzel rolls, or other sturdy roll of your choice
For the mustard topping:
1-2 tablespoons of the beer cooking liquid, adjust to the thickness you prefer
1-2 tablespoons of chopped pickled jalapenos, adjust to the heat you prefer
½ cup of stone ground mustard
1 tablespoon of mayonnaise
Mix ingredients together and set aside to slather on rolls.
For the relish topping:
1 cup of chopped cherry tomatoes
Charred onions (see above), chopped
1 teaspoon of apple cider vinegar
Mix together and set aside to top the sausages.
Assemble:
Slater the rolls with mustard topping, add bratwurst, top with tomato relish.
