If you had told me when I was a kid that I would eat, and love, a cold soup I would definitely have told you were nuts! Now here I am sharing a recipe for one of the most delicious cold summer soups I’ve ever eaten!
It is easy and doesn’t require any measuring. Add or subtract things you don’t like or things you do like.
Fresh tomatoes, chopped
1 small red onion, chopped
1-2 fresh jalapenos, chopped (remove seeds and veins for less heat)
Handful of fresh basil, parsley, rosemary
1 cucumber chopped
1-2 cups of tomato juice (I use spicy V-8)
Keep a small bit of chopped cucumber, onion, and tomatoes aside to top the soup.
Put everything in the food processor or blender and mix until smooth.
Pour into a container, cover, and chill until very cold.
Ladle into bowls and top with a sprinkling of cucumbers, onions, and tomatoes.
Really nutritious, low in calories, and refreshing. Keeps in the refrigerator well and is a welcome sight after a long hot summer day!
