I have waxed poetic about salmon many times on the blog, but this time is different. This time I’d like to discuss how salmon and veggies can actually be quite filling and delicious, the very opposite of what one often associates with “healthy eating.”
Recently I had the pleasure of eating this gorgeous salmon served over roasted Brussels sprouts with bacon, scallion and ginger salad, and a maple syrup and Crystal hot sauce beurre blanc at Chop House. It was every ounce as delicious as it looks.
The complexity of a simple dish is making it balanced- just enough heat to be interesting, not enough to burn your mouth. Just enough sweet to balance out the acid and salt. This dish hit all the marks and even surprised me with the (delicious) addition of lemongrass.
Don’t fall into the trap of steamed fish and wilted veg. Add sauces and spices and unexpected flavor combinations to your go-to dishes. Make your healthy meals exciting and you’ll be happy it’s dinner time!
