Until very recently, I had no idea what farro was (it’s a grain, btw, and you cook it very much like pasta). I am highly skeptical of ancient grains because, quite frankly, I never think they taste very good.
I am happy to report that this dish is the exception!
This can be served as a side dish or on its own as a main for lunch. I ate it hot, but I have a sneaking suspicion it would be delicious cold, too. This dish is very salty and tangy (aka not for the faint of heart!). Enjoy!
You will need:
½ cup farro
Feta cheese
Juice of half a lemon
1 Tbls olive oil
Salt and pepper
Basil
Cook and drain the farro.
Crumble in as much feta cheese as desired (remember that feta is salty)
Pour in lemon juice, salt, pepper, and as much basil as you like.
Toss together and enjoy!
