Stir fry is one of my favorite things to make- it’s easy, it’s fast, and it can be made with just about anything you have laying around in your refrigerator. Leftover vegetables? Add them to the skillet. Chicken breast from 2 nights ago? Throw it in! Stir fry can be anything you want it to be, so don’t be afraid to experiment.
Here’s one I made recently:
-Basmati rice (cooked in the Instant Pot)
-Beef strips (leftover from fajitas)
-Squash and onion (leftover from kebabs)
-Shredded carrots and spinach (leftover from spinach salad)
-Asparagus tips
-Garlic, soy sauce, just a small splash of sesame oil
As you can see, half of the ingredients are from some other dish from earlier in the week...and that’s ok! Using up your leftovers cuts down on food waste and is a smart way to get the most bang for your buck. It’s like creating a new meal without having to run to the grocery store (and that is always a win!).
