This is the easiest recipe that-really-isn’t-a-recipe. It is simple and remarkably delicious and an easy way to get everyone in the family to love vegetables.
Here’s how you do it:
Preheat your oven to 375 degrees
Cover a sheet tray with aluminum foil (foil is recyclable so I use it more often)
Dump a bunch of vegetables on the foil lined tray, sprinkle with olive oil, salt, and pepper
Roast in the preheated oven until the vegetables are tender, about 20 minutes
You can see in the two photos that I used carrots, yellow squash, zucchini, and tomatoes. I cooked the carrots, on the sheet tray first because they are a harder vegetable, then added the squash, zucchini, and tomatoes.
You can use any vegetables you enjoy but always remember to cook the harder vegetables first - like potatoes, celery, carrots, onions - then add the softer vegetables.
We like this simple and easy with just olive oil, salt, and pepper but you can add whatever fresh herbs you like.
