This is the easiest recipe that-really-isn’t-a-recipe. It is simple and remarkably delicious and an easy way to get everyone in the family to love vegetables.

Here’s how you do it:

  • Preheat your oven to 375 degrees

  • Cover a sheet tray with aluminum foil (foil is recyclable so I use it more often)

  • Dump a bunch of vegetables on the foil lined tray, sprinkle with olive oil, salt, and pepper

  • Roast in the preheated oven until the vegetables are tender, about 20 minutes

You can see in the two photos that I used carrots, yellow squash, zucchini, and tomatoes. I cooked the carrots, on the sheet tray first because they are a harder vegetable, then added the squash, zucchini, and tomatoes.

You can use any vegetables you enjoy but always remember to cook the harder vegetables first - like potatoes, celery, carrots, onions - then add the softer vegetables.

We like this simple and easy with just olive oil, salt, and pepper but you can add whatever fresh herbs you like.
