As we continue through the 2020 pandemic, as we are all super quarantined, it is a period of great kitchen creativity for me and for many! I had a lot of fun trying to come up with quick and easy recipes that used up the ingredients we already had on hand. This delicious little option came when we had extra apples that needed to be used up.
1 can of biscuits
2 finely diced raw apples
1 teaspoon of sugar
¼ teaspoon of cinnamon
1 tablespoon of melted butter, + a smidge extra
Pinch of salt
A sprinkling of powdered sugar
Mix the apples, sugar, cinnamon, salt, and the butter together in a bowl.
Roll each biscuit out flat to about ¼ inch.
Put a heaping tablespoon of the apple mixture in the middle of a biscuit.
Brush the edges with melted butter and place another flattened biscuit on top pressing the edges together.
Use a fork to crimp the edges.
Bake according to the biscuit directions.
Sprinkle with powdered sugar. Serve warm or cold.
This is so easy to change up by adding whatever fruit you like, or chocolate and nuts. Simple and very delicious!
