Easy Dinner: Tostadas


Tostadas!

Seems like I often come home and wonder ‘what’s for dinner?’ Unfortunately, the dinner fairy never shows up and creates a stupendous meal so we are left to whatever is in the pantry/freezer/refrigerator. I came up with this quick meal recently using things I had on hand. We love Mexican flavors and thought this was pretty good.


Tostadas

Tostada shells

Refried beans

Lettuce, shredded

Tomato, chopped

Avacado, chopped

Olives, sliced

Shredded cheese

Jalapenos, sliced


  1. Smear a layer of refried beans on each tostada shell and top with a handful of cheese.

  2. Place under the broiler until the cheese melts.

  3. Top with the fixings of your choice.

Other options:

Leftover shredded chicken

Cooked ground beef

Sour cream

Guacamole

Salsa
