Easy Chocolate Cake

I made this cake yesterday after finding the recipe in the March issue of Southern Living. It’s so interesting because you mix and bake in the same pan! I was skeptical until I tasted it!


Looks (and tastes!) amazing

Cake ingredients


1 ½ cups of flour

¾ cup of sugar

⅓ cup of cocoa powder

1 teaspoon of baking soda

½ teaspoon of kosher salt

⅓ cup of canola oil*

1 tablespoon of white vinegar

2 teaspoons of vanilla extract


*I didn’t have canola oil so I substituted peanut oil.


  1. Preheat the oven to 350 degrees.

  2. Sift into an 8x8 pan the flour, sugar, cocoa powder, baking soda, salt. Spread evenly in the pan.

  3. Make 3 wells in these dry ingredients and pour into one the oil, the next one the vinegar, the last one the vanilla.

  4. Pour 1 cup of water over the top.

  5. Mix with a fork until everything is well blended.

  6. Bake until a toothpick inserted in the center comes out clean.

  7. Transfer to a wire rack.


Icing ingredients


⅓ cup of butter

¼ cup of milk

3 tablespoons of cocoa powder

2 ¾ cups of sifted powdered sugar

1 teaspoon of vanilla extract


  1. Cook the butter, milk, and cocoa powder over low heat until well blended. Stirring often.

  2. Remove from the heat and gradually whisk in the powdered sugar and vanilla.

  3. Spread the icing over the wrm cake.

  4. Top with chopped nuts, if desired.
