I love this dip/side dish/condiment because it is very easy and uses ingredients usually found in my pantry and refrigerator. There’s virtually no measuring and it comes together in a few minutes.
1 can black beans, drained and rinsed
1 red onion, diced
½ each red bell pepper, green bell pepper, yellow bell pepper
A fist full of fresh cilantro, chopped (yes, you can use dried but it isn’t as delicious)
1-2 fresh jalapenos, finely chopped (remove the seeds and veins for less heat)
1-2 tomatoes chopped
1 lime, juiced
Salt and pepper to taste
Dump everything in a bowl, taste for seasoning. Serve on top of grilled fish, use as a dip for tortilla chips, or top your weekly tacos. Delicious, good for you, and very easy!!
