Easy Baked Salmon


Serve with a lemon garnish for max fanciness

Our oven died recently, so cooking has become a creative mix of using the stove and the toaster oven (to mostly wonderful effect). One of my favorite things to bake in the toaster oven is salmon.


My husband is allergic to shellfish and stays away from regular fish in general, which means there’s only ever 1 salmon fillet to bake- perfect for the toaster oven! (He usually sautes chicken on fish nights.)


My friend Lauren turned me onto baked salmon because she is a smart cookie who doesn’t waste time and likes delicious food. What follows is (kinda) verbatim what she told me to do:

  1. Go to Publix and purchase the pre-bagged Asian salad mix in the produce area. This bag comes with all the chopped veggies, sliced almonds, wonton skins, and dressing you will need. Take this home and make it (a.k.a. dump it into a bowl).

  2. Drizzle a little bit of olive oil, salt and pepper on your salmon fillet. Bake at 450 degrees for about 15 minutes.

  3. Place that delicious salmon on top of your salad and enjoy!

Pro-tip: add lemon slices to your salmon before you bake it for a zingy zip


Proer-tip: this may sound weird, but I have tried using McCormick Grill Mates Montreal Steak Seasoning (not an ad, just a delicious seasoning!) on the fish in addition to the salt and pepper and it is good- give it a whirl and tell me what you think!


Meals that are simple are often delicious and this one is no exception! This is a great way to save time and eat healthy(ish) in the process. Enjoy!
