Hamburgers are a staple in our house. From classic cheeseburgers to burgers topped with blueberry jam and everything in between, my husband and I simply can’t get enough.
One of my new favorites is a curry-spice burger that’s super simple to make and BIG on flavor. This dish isn’t spicy as in hot, but it is filled with spice!
You can find yellow curry paste in the ethnic aisle of your local supermarket or you can try many different options available for order online. I like potato buns for this dish, but if you prefer a baguette style, that would work, too!
You will need:
1 lb. ground beef
1 Tbls. yellow curry paste
Salt and pepper
1 red onion
2 Tbls. mayo
1 lime
Burger buns
In a large bowl, mix the ground beef and curry paste, being careful not to overwork the meat. Season with salt and pepper. Form into patties. Cut the onion into rounds.
Combine the mayo, the juice of half the lime, and a dash of salt and pepper in a small bowl. Whisk together and let sit.
Place the onion and burgers in a skillet with a drizzle of olive oil (sesame oil would also work here, but be warned that it carries a strong flavor). Cover with foil and cook on medium heat for 5 minutes, then uncover, flip the onions and patties, and recover to cook for another 5 minutes. The onions should be dark caramelized brown and soft, the patties should be cooked through.
Assemble your burgers: bun-lime mayo-patty-onion. Voila!
A great addition to this burger would be a crisp leaf of romaine lettuce and of course- a toasted bun! If cheese is your thing, I would consider a mildly flavored slice that adds creaminess to the burger but doesn’t overwhelm the curry paste (baby swiss perhaps or muenster).
