This is another of my recipes that you can play with and change up to suit your taste. It is an easy side dish but also makes a yummy topping for tacos, broiled fish, or baked chicken.
1 can of yellow corn, drained and rinsed
1 can of black beans, drained and rinsed
2 chopped tomatoes
1 chopped avacado
¼ - ½ cup of chopped cilantro - use as much or as little as you like
¼ - ½ cup of sliced scallions - use as much or as little as you like
1 fresh jalapeno, thinly sliced - use as much or as little as you like
1 teaspoon of olive oil
Juice of one lime
Salt and pepper to taste
Combine all ingredients and refrigerate for at least an hour.
Taste before serving and add additional lime juice, to taste.
It’s so simple and so delicious you won’t believe it! If you like more of any of these ingredients just add them to create the taste you and your family enjoy!!
