Cold Frying




I was talking with my brother recently who shared with me that his son and daughter-in-law had surprised him with a delicious home cooked steak frites birthday dinner with a catch … my nephew and niece-in-law found a fries recipe that starts with cold oil!


Now, my whole life, I’ve been told that to have crispy fries you have to have very hot oil so I found this amazing! I started looking online and found a zillion recipes, including one in the New York Times. If it is good enough for the NYT, my nephew, niece-in-law, and brother it’s good enough for me.


Without further ado, here’s how you do it ….

  • Potatoes, cut into whatever shape you like

  • Oil for frying

  • Colander for rinsing

  • Paper towels for drying the draining

  • Salt to taste

  1. Pour the oil into a cast iron skillet, or a dutch oven.

  2. Cut the potatoes, place them in a colander and rinse them, dump them onto paper towels and dry them.

  3. Place the potatoes into the cold oil and turn on the stove.

  4. Cook to desired brownness.

  5. Drain on paper towels, add salt, eat them all.

For the sake of science I also tried this recipe with frozen french fries and it works! My preference is for fresh real potatoes because I think they always taste better but you do you.
