Ground chicken is an underappreciated ingredient; it is versatile, delicious, and very quick-cooking. I like this chicken meatball recipe because you can really customize it any way you want. You may want to try basting the meatballs in BBQ sauce or using Asian or Mexican inspired spice mixtures. You can use breadcrumbs instead of panko. The world is your oyster!...er...chicken meatball!
You will need:
1 lb ground chicken
1 large egg
1 cup panko breadcrumbs
2 Tbsp Italian seasoning
1 tsp salt
1 tsp black pepper
2 tsp onion powder
1 tsp minced garlic
Preheat oven to 400 degrees. Line a baking sheet with aluminum foil; lightly spray foil with cooking spray.
Mix all ingredients in a large bowl. Incorporate everything together well- you want all ingredients to be evenly distributed throughout the meat mixture.
Roll mixture into meatballs approximately the size of a golf ball.
Bake for 20-28 minutes, until chicken is cooked through.
I serve these meatballs with a vegetable side and a starchy side like mashed potatoes, but you could make meatball subs out of them or serve them as an appetizer. Enjoy!
