Chicken arugula is a dish that was born from having a whole bunch of leftovers + not a lot of time. It ended up being delicious!
Here’s what it is made of:
Roasted chicken (leftover from Sunday dinner)
Bed of arugula (leftover from Sunday dinner salad)
Yellow rice with mixed veggies (leftover side dish from jerk chicken)
Extra toppings like jalapenos, lemon vinaigrette, etc. (always on-hand in the fridge)
I threw these things together and created a dish that was balanced and tasty without having to cook a thing (plus we used up all the leftovers- it’s a win-win!).
